Italian Sandwich Bread
Olive Oil with Garlic and Herbs

| Ingredients for Finished Bruschetta |
4 halves of Bruschetta Bread
1/3 cup of Diced Red Tomatoes
1/3 cup of Diced Yellow Tomatoes
1/4 cup of fresh Mozzarella, diced
2 tbsp of fresh Mozzarella, diced
2 tbsp diced Red Onion
1 tbsp Olive Oil
2 tsp Red Wine Vinegar
1 tbsp Basil, julienned
1 tbsp Fresh Cilantro Leaves
1 pinch of Salt and Pepper
1 drizzle Olive Oil
1/3 Parmesan Cheese
4 turns fresh Ground Black Pepper |
| Directions for Bread |
Brush bread on both sides. Grill until golden brown.
Set aside.

| Method for Bruschetta Caprese |
• Shingle bread on plate.
• Combine tomatoes, Mozzarella, red onion,
1/2 oz. olive oil, basil, cilantro and salt and
pepper in a mixing bowl.
• Mix well and pile relish on the center of the
bread.
• Drizzle with olive oil.
• Garnish with Parmesan cheese and black pepper. |
