| Age Dashi Tofu |

| Ingredients |
300 gram 1) package of tofu
(removed from water and cut into quarters)
4 tablespoons 2) soya suace
3 tablespoons 3) Mirin (sweet Japanese sake used for seasoning)
3 cups 4) fish stock
corn starch
daikon (Japanese radish) – ground up
ginger – ground up
green onion – finely chopped

| Method |
Mix ingredients (2 – 4) and bring to a boil in a sauce pan.
Batter tofu in corn starch, and place in boiling oil (325 degrees)
until the tofu floats to surface of oil (approx 1 – 1 1/2 minutes).
Place tofu in a bowl and place daikon, green onion and ginger
on top of tofu (as garnish and for preference of taste).
Place hot sauce over tofu.
