| Camarones con Mango / Prawns with Red Wine Chorizo |

| Ingredients |
4 prawns (peeled and deveined)
6 Pcs triangle cuts of Red Wine Chorizo
1/2 teaspoon of Achiote (Annato)
1 oz Red Wine Tocornal Wine
Julienne onions and pepper
1/4 teaspoon ground garlic
1/4 ground chipotle
4 oz special house tomato sauce
1 teaspoon salt
1 teaspoon pepper

| Method |
1. On a sautéed pan, heat the Canola Oil. Add the julienne
peppers and onions until the flavor get out of it for about
40 seconds. Add the Annato, garlic with the 4 Pcs of prawns.
2. Secondly, Add the Chorizo with the Red Wine Tocornal Wine
to deglaze the pan.
3. Thirdly, finish with the special house tomato sauce until the fusion of the flavour of the Chorizo and Prawns.
