Executive Chef Mason Mullock
As a boy, Chef Mason Mullock always wanted to be an artist with an early passion for painting and the fine arts. At an early age he discovered the culinary arts as a focus for his creative energy. Starting his professional career at age 14, Mason secured a full-time apprenticeship at the prestigious Ebbit Room at the Virginia Hotel in Cape May, New Jersey. A native of Cape May, Mullock has more than 18 years experience in the hospitality industry with seven years as the Executive Chef for SpiritLine Cruises.
At SpiritLine his responsibilities include extensive menu development, kitchen management, and systems implementation. During his tenure at SpiritLine, Mullock has not only totally reworked the four course menu for the public dinner cruise which serves up to 250 guests nightly; but also developed extensive catering menus for SpiritLine’s thriving private charter business. Mason favors an a la carte approach to banquet service treating each customer as if they are the only diner in the room.
Before joining the SpiritLine team, Mullock, a graduate of the Culinary Institute of America in New York, worked at several five star resorts and hotels located both in the continental United States and abroad. He perfected his skills at the Ritz Carlton, Amelia Island and the Atlantis Casino and Resort on Paradise Island, Bahamas. In addition, Mullock’s experience includes a contract supervising the opening of operations and new menu development for the luxury cruise ship Clelia II, operating in Europe, the Mediterranean, and Western Africa.
This global influence is evident in the eclectic flair of Mason’s dishes. “I enjoy surprising my patrons by using unexpected flavors in standard preparations”, says Mullock, “But my favorite part of my job is creating beautiful and unusual presentations, I have the opportunity to be creative and take an artistic approach.” Throughout his seven years with SpiritLine he has continued their longstanding tradition of excellence while adding a modern twist to Lowcountry favorites.
