Executive Chef Jeremy Holst
Mt. Pleasant native Jeremy Holst began his culinary journey years ago when he took a summer job as a dishwasher. Watching the line come to life as the dinner rush hit, he knew his destiny.
Holst joined Six Tables as Executive Chef in 2007. A graduate of the Culinary Institute of America in New York, Chef Holst has worked and studied under some of the most innovative and respected chefs in five star, five diamond establishments throughout the United States.
Beginning with an externship at the Four Seasons’ Manele Bay Hotel & Resort in Lanai, he became acquainted with the Asian Fusion style of cooking prevalent among the Hawaiian Islands. The fast pace of the popular Pano’s and Paul’s in Atlanta increased his efficiency in the kitchen before he moved on to work under Chef Ken Vedrinski at the renowned Woodlands Resort and Inn in Summerville, South Carolina. Opportunities to expand his knowledge and skills beckoned, and Chef Holst relocated to Las Vegas to assume grill responsibilities at The Bellagio’s Fix. He then moved to the five diamond Ritz-Carlton, Lake Las Vegas, widening his responsibilities in the Medici Café to encompass rotisseur and banquet. Following an urge to return to his Southern roots, Chef Holst returned to the Charleston market.
Such varied, high quality experience is evident in every aspect of Chef Holst’s work today at Six Tables, from the subtle interplay of sauces through each course to the elegant staging of the food. His passion for traditional French cooking techniques produces a unique twist to the menu items featured at the restaurant each evening.
Chef Holst currently resides in Mt. Pleasant with his wife and young son. When not creating new menu concepts in the kitchen of Six Tables, he enjoys outdoor activities such as fishing or relaxing on the beach.
