True Blue Steak Sandwich with Red Onion Jam*

2, 3 oz. Beef tenderloins
to taste Salt and pepper
2 pieces Onion baguette
2 oz. Blue cheese, crumbled
• Season two 3 oz. Beef tenderloin medallions with salt and pepper and grill to desired temperature.
• Grill 2 pieces of onion baguette. • Place grilled beef medallions on top of grilled baguette, then top with blue cheese crumbles.
• Place under broiler until blue cheese melts.
• Place on serving place and top each medallion with red onion jam.
• Serve with a side of sweet potato French fries
