It soon became clear that a career in the Culinary world was in his future. He attended the Culinary Institute of America where he graduated with honors in 1996. Upon graduating he headed to Boston to work at the highly acclaimed restaurants L'Espalier and The Harvest. Chef Apthorpe moved to Austin in 1999 and became Sous Chef at Mirabelle Restaurant. He was named Executive Chef of Mirabelle a year later. Since then, he's been voted “Best Chef” in the Austin Chronicle’s Restaurant Reader’s Poll three times.
