Ryan began his culinary career, unknowingly, while growing up in Chanute, Kansas. Always surrounded by fresh vegetables from the garden, Ryan didn’t realize that he would come to love the asparagus and rhubarb he would mow down or the quinces he would use for batting practice. Ryan’s first restaurant job was in high school, working as a short order cook. After college, he found himself in Minneapolis where he took a job as a breakfast cook. After working five years as a line cook in various casual restaurants in Minneapolis, Ryan enrolled at the Art Institutes International, to become professionally trained and educated. Ryan has had the opportunity to work at some of the most elite dining establishments in Minneapolis/St. Paul - The Palomino, Zander Café, W.A. Frost and, most notably, Restaurant Aquavit - working alongside James Beard award-winning and classically trained European chefs. Recognized for his outstanding work ethic and his desire to succeed he was promoted to Sous Chef. While still yearning for culinary knowledge, he took a lateral turn in his career and accepted the Banquet Chef position at the flagship Radisson Plaza Hotel in downtown Minneapolis. Here he learned the proper technique and organizational skills to cook for mass quantities of people. As Ryan has made his rounds in the restaurant industry, he has been dedicated to serving the best quality product possible. He tries to relay to his cooks to take personal pride in the product. “Every order that you prepare, think that your mother is the one that ordered it.
